How to Make Homemade Broccoli Casserole Using Frozen Broccoli

This is a super easy casserole to prepare. It only takes a few minutes to get it ready for the oven. Bake time comes in right about forty-five minutes.
And that allows all our flavors to meld together. I have a feeling you’re going to enjoy this one!
Cleanup is also easy, since all you need is a 13×9 casserole dish. Make sure to grease it with butter (I forgot to recently and it did stick to the bottom of the pan).

I make so many casseroles for my family (and years ago when just cooking for myself) because they are easy and filling. And this broccoli casserole has been in my rotation for many years.
All you need are a handful of simple ingredients, and it’s incredibly affordable. It’s never fails to fill the bellies of my family with leftovers for tomorrow’s lunch.

Broccoli: The only thing you need to watch out for with your broccoli is if there is a lot of ice crystals formed. If there is a lot of extra ice, you will want to steam your broccoli for a couple minutes before moving on. This added water can lead to a runny consistency. Otherwise, no extra prep is needed for your broccoli.
Onion: Traditionally, I use a regular, medium yellow onion. But you can go with a sweet onion if you prefer the flavor. Chop your onion into medium small pieces.
Cheddar Cheese: I’ve found sharp cheddar to provide the best flavor. Sharp cheddar pairs so incredibly well with broccoli. But, if you aren’t a fan, you can go with mild. Make sure to shred your cheese before mixing it in.
Ritz Crackers: This gives us some added flavor and a bit of a crunchy texture. I just crumble enough to cover my casserole. You can add as much or as little as you like. Just crumble your crackers by hand.
Eggs: Eggs add some thickness and structure to our casserole. Make sure to beat your eggs before adding them in.
Mayo: This is another thickening ingredient, but it also provides some flavor. I recommend regular fat mayo for this casserole, but lower fat varieties can be used in a pinch.
