How to Make Homemade Tuna Rice Casserole with Corn Flakes and Cheese Soup

Let’s be honest, one the main perks to making a casserole is that are easy to make. They are the perfect way to quickly feed the family without needing to get takeout.
And this tuna casserole is super easy to make and it has a quick bake time. Prep is just a few minutes and then on to the oven for fifteen minutes.
This makes enough to fill a 13×9 baking dish, so you should have leftovers for tomorrow’s lunch.

Ingredients

While most tuna casserole recipes use a noodle base, I’ve found that rice is an awesome alternative. The texture and flavor is so good and it’s incredibly filling.
You will need to cook your rice before adding it to your other ingredients. I use my rice cooker, but you can go with your preferred rice cooking method.

- Tuna
- Cooked Rice
- Condensed Cheese Soup
- Milk
- Chopped Parsley
- Corn Flake Crumbs (or Ritz Crackers)
Tuna: Canned tuna fish in water or oil can be used. You will need to drain before adding it to your other ingredients.
Rice: You can cook your rice in a rice cooker or on the stove top. Cook two cups before moving on to the rest of the recipe. I usually use short grain, white rice. But you can use long grain or brown rice too. Go with your favorite style.
Corn Flakes: Any brand works. A great way to crush your corn flakes is to place a half cup in a plastic bag and then crush by hand or with a rolling pin. No mess and super easy!

Instructions

This recipe is as simple as combining and layering your ingredients. It’s super straight forward, so once your rice is cooked it’s time to get started!
Step 1: Preheat oven to 400 degrees and grease your baking dish.
Step 2: In a bowl stir together your milk and cheese soup.
Step 3: Add a layer of rice, then tuna, then parsley and soup mixture. Continue layering in that order until gone.
Step 4: Combine crushed corn flakes with melted butter and sprinkle over casserole.
Step 5: Bake in preheated oven for 15 minutes. Remove from oven and rest for at least 5 minutes.
